PIneapple Coconut Margarita

Last summer, while visiting my parents out in Orange County (California, not New York or Florida) my mom and I went to a Mexican restaurant for lunch and drinks and I had the best EVER Coconut margarita. I tried to figure out how to make it when I got home but after a lot of research online I realized I couldn’t find a recipe close to the one I tried. They didn’t make it with coconut cream but used coconut water instead. The description on the menu simply states, coconut water, tequila and lime juice. Well, I’ve had coconut water and it didn’t taste like coconut. Truth be told I wasn’t a big fan. I know that it is THE thing to drink right now but I didn’t like it.

I wasn’t ready to give up on making these at home though so I kept thinking about them every once in awhile. Then I thought, why not use pineapple flavored coconut water along with coconut flavored tequila. PERFECT!!!!!!!!!!!!!!!!!!!!!!! This drink isn’t heavy and it just screams SUMMER! (I’m starting to think that I may have an issue with caps.) It’s so simple to use and perfect for this weekend for Cinco de Mayo. I used Agave Nectar in this drink. Did you know that is what tequila is made out of? You can find it in the syrup isle of your grocer store, usually near the maple syrups. If you can’t find it you could use a simple syrup instead. Just mix 2 parts sugar to 1 part water and heat and stir until the sugar dissolves.

  • 2 oz Coconut Tequila
  • 4 oz. Coconut water flavored with pineapple
  • 1 T agave nectar or more to taste
  • juice of 1/2 lime
  • salt to rim the glass optional


  • combine all ingredients in a shaker except the salt
  • run a slice of lime around the edge of the glass and dip edge of glass in salt
  • add crushed ice to the glass and fill with margarita
  • enjoy!
